Coconut Chia Seed Pudding

Want a delicious low-carb pudding full of flavor and omega 3’s? Want to be able to make it in just minutes with no cooking? Done! This recipe is so easy and will be your new go-to snack or dessert.

Ingredients (makes six 1/2 cup servings)

1 can full fat coconut milk

1 cup unsweetened vanilla almond milk (or other dairy-free milk)

6 Tbs chia seeds

1/4 cup unsweetened coconut flakes

1/2 tsp vanilla extract

pinch of salt

Berries for garnish

Simply mix all ingredients (except for the berries) in a large bowl and chill in the refrigerator for at least 4 hours. Mix again and spoon into portions. Layer with berries if desired.

Per Serving:

6 g carbs/ 4 g fiber/ 17 g fat/ 3 g protein/196 calories
